Ingredients

Scale
  • 1 pre-made 9-inch pie crust (store-bought or homemade)
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 3/4 cups whole milk
  • 4 large egg yolks, lightly beaten
  • 2 tablespoons unsalted butter
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Chocolate shavings or cocoa powder for garnish (optional)

Instructions

  1. In a medium saucepan, combine the granulated sugar, cocoa powder, cornstarch, and salt. Whisk until well blended.
  2. Gradually whisk in the whole milk, ensuring a smooth mixture.
  3. Place the saucepan over medium heat, whisking constantly to prevent sticking.
  4. Once thickened and bubbling, reduce heat to low and temper the egg yolks by adding a small amount of the hot mixture to them, then return to the saucepan.
  5. Cook on low for 2-3 minutes until thickened to a pudding-like consistency.
  6. Remove from heat and stir in the unsalted butter and vanilla extract until fully melted.
  7. Pour the chocolate filling into the pre-made pie crust and smooth the top. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  8. In a large mixing bowl, pour in the heavy whipping cream.
  9. Add the powdered sugar and beat on medium-high speed until soft peaks form (about 3-5 minutes).
  10. Remove the plastic wrap from the pie and spread the whipped cream over the chocolate filling.
  11. Garnish with chocolate shavings or cocoa powder if desired.
  12. Return to the refrigerator for about 30 minutes before serving.
  13. Slice the pie with a sharp knife and serve chilled.
